What I Ate Wednesday

Helloooooo & Happy Wednesday!

I’ve been feeling VERY inspired and creative in the kitchen, so I’m here to share today!

Last week I confessed that I’ve gained some weight over the last few months and I’m really focusing to get rid of those pesky pounds. Thankfully, I know what works best for me already when it comes to weight loss so I’m really keeping that in mind when I’m creating and planning meals.

Personally, I see the scale move down when I limit breads and pasta and things of that nature, mostly just because those are the kinds of things I tend to over eat. I still eat them, just not quite at much.

So here’s a look at some of the meals I’ve been having since last Wednesday!

Breakfasts:

Kodiak Cakes topped with almond butter, blueberries, and maple syrup and a side of scrambled eggs and a slice of bacon.

This was my first time trying Kodiak cakes, they are pretty good! I’m so glad I bought it at Costco rather than Safeway…much better price.

English muffin topped with almond butter, blueberries and maple syrup! I’m pretty much addicted to this almond butter, blueberry, maple combo. Its fricken’ delicious. I love everything about it.

Heads up the Kirkland brand Almond Butter is hands down the BEST almond butter I’ve ever had. I’ll probably buy a whole case next time I’m at Costco.

Lunches:

I’m a leftovers for lunch type of gal, but one day I did convince the hubby to bring me Pita Pit! It was aaaamazing. I had the chicken on wheat pita packed with all the veggies plus hummus and Tzatiki sauce. It was everything I dreamed it would be…but I forgot to snap a photo.

Now here’s where I’ve really been getting creative!

Chicken on spinach salad with tomatoes. I used this Spicy Paprika & Lime chicken recipe from Eat Drink Paleo. I thought the flavor was good, but there was too much marinate for the amount of chicken, next time I’ll plan to cook at lot more chicken.

On the side I had an English muffin with a garlic & herb Laughing Cow wedge sprinkled with salt & pepper. My new favorite snack!

I also made Spicy Orange Chicken and LOVED it. I used this recipe from Add A Pinch. I will be making this again soon… maybe even tonight.

And then I lost my fricken’ mind and decided to buy fresh salmon! Hello, Erin…. that crap has scales!!!! Thank goodness for the Food Network, apparently I’ve watched enough cooking shows to figure THAT out. And it actually turned out pretty great! I seasoned the salmon with lemon juice, salt & pepper and garlic powder, then baked it for about 20 minutes ( maybe a little too long because it fell apart) at 375. Yum. Served with roasted cauli & sweet potato.

This dinner was super filling! Probably due to eating half a head of cauliflower…

Snacks & Desserts:

I’ve mostly cut out snacks and dessert because I like to eat big meals. See above.

Vanilla Greek yogurt with my beloved almond butter, chocolate chips, granola and blueberries.

I’m also LOVING dried fruits and trail mixes. I ate this WHOLE bag of dried pineapple in one sitting. It was less than 300 calories, so still a win in my book!

And this trail mix from Costco with cranberries, blueberries, almonds, cashew and white chocolate chips!

It’s been a darn good week of delicious eating!
